Ingredients

  • 2 cups Sushi Rice, or short grain rice
  • 4-6 Nori Sheets
  • 1 small Carrot, julienned
  • ½ Cucumber, julienned
  • 1 small Avocado, sliced
  • ½ cup Red Cabbage, shredded
  • Handful of Spinach or Microgreens
  • 2 tbsps Sesame Seeds
  • 2 tbsps Tamari, for drizzle or dipping
Optional Toppings or Sides
  • Pickled Ginger
  • Wasabi
  • Toasted Sesame Seed Oil

Method

  1. Prepare the Rice:

Cook the sushi rice according to the package directions.
When finished, allow it to cool slightly until it is comfortable to handle.
🌿 Mindful Moment: Notice the warmth and gentle aroma of the freshly cooked rice. Watch the steam rise and disappear, allowing the waiting time to become part of the process.
🧒 Kid Prompt: “What does the warm rice remind you of? Tiny clouds, soft snow, or something else?”
💬 Reflective Prompt: “What helps you feel comfortable when you have to wait?”
  2. Set Up the Fillings:

Arrange the carrot, cucumber, avocado, cabbage, greens, and any other desired fillings on a tray or platter.
🌿 Mindful Moment: Pause and notice the variety of colours, shapes, and textures. See which ingredient naturally catches your attention first.
🧒 Kid Prompt: “How many colours can you find? Can you make a rainbow?”
💬 Reflective Prompt: “What brings colour, variety, or joy into your everyday life?”
  3. Assemble the Wraps:

Place one sheet of nori on a clean surface with the shiny side facing down.
Using slightly damp hands or a spoon, spread a thin layer of rice over about ⅔ of the nori sheet.
🌿 Mindful Moment: Notice the texture of the rice and the gentle movements required to spread it. Experiment with using just enough pressure rather than rushing.
🧒 Kid Prompt: “Can you spread the rice gently, like you're making a soft blanket?”
💬 Reflective Prompt: “What helps you approach something with gentleness instead of rushing?”
  4. Layer Mindfully:

Arrange the vegetables across the center of the rice and sprinkle with sesame seeds.
🌿 Mindful Moment: Notice how each ingredient adds something different. There is no single “right” combination, allow curiosity and preference to guide you.
🧒 Kid Prompt: “Can you ‘paint a rainbow’ with your vegetables?”
💬 Reflective Prompt: “What is something unique that you bring when you're with other people?”
  5. Roll with Care:

Starting from the bottom, gently but firmly roll the nori around the filling.
Moisten the uncovered edge with a little water and press gently to seal.
🌿 Mindful Moment: Feel the balance between firmness and gentleness as you roll. If something shifts or falls out, notice your response and simply adjust.
🧒 Kid Prompt: “Can you roll it slowly like you're wrapping up a tiny treasure?”
💬 Reflective Prompt: “How do you respond when something doesn't go exactly as planned?”
  6. Slice & Serve:

Carefully cut the rolls into pieces, or leave them whole to enjoy as wraps.
Drizzle lightly with tamari or serve it on the side for dipping.
🌿 Mindful Moment: Look at the colourful center of each sliced roll. Before eating, notice the colours, aroma, and textures. Take the first bite slowly.
🧒 Kid Prompt: “What shapes and colours can you see inside your roll?”
💬 Reflective Prompt: “What do you notice when you give your full attention to the first bite?”
