These Raspberry Coconut Joy Bites are sweet, chewy, and naturally delicious. Made with juicy raspberries, coconut, and rich chocolate, these no-bake vegan energy balls are the perfect healthy snack or easy dessert ready in minutes.

Ingredients
  

  • ¾ cup Almond Flour
  • ½ cup Unsweetened Shredded Coconut, plus extra for coating
  • 2 tbsps Freeze-Dried Raspberries (crushed) or Raspberry Powder
  • 2 tbsps Maple Syrup or Honey
  • 1 tbsp Coconut Oil, melted
  • 1 tsp Vanilla Extract
  • Pinch of Sea Salt
  • Beetroot Powder, optional for a colour boost
Optional Toppings
  • Extra Raspberry Dust
  • Cocoa
  • Melted Dark Chocolate

Method
 

Tap the time in each step to start a build-in timer and cook with a little more ease and flow. Be sure to have your volume up to hear the timer chimes!
  1. Crush the Raspberries:

    Place the freeze-dried raspberries in a small bag and crush with a rolling pin or use a food processor.
    Set some aside for coating.

  2. Mix the Base:

    In a bowl, combine the almond flour, shredded coconut, raspberry powder, sweetener of choice, melted coconut oil, vanilla extract, and salt.
    Mix until a soft dough forms.
    🌿 Mindful Moment: Feel the mixture coming together, crumbly becoming soft and cohesive. Notice the scent of coconut and berries blending.

  3. Form the Bites:

    Scoop out about 1 tablespoon of the mixture and roll into balls with your hands.
    If the dough feels dry, add a tiny splash of water or melted coconut oil.

Notes

Storage and Reheating

Fridge: Store in an airtight container up to 1 week.
