Method

Tap the time in each step to start a build-in timer and cook with a little more ease and flow. Be sure to have your volume up to hear the timer chimes!
    1. Roast the Rounds:

Preheat the oven to 200°C (400°F).
Toss the potato slices gently with 1 tablespoon of the olive oil, salt, and pepper.
Arrange them in a single layer on a baking sheet and roast for 18 to 20 minutes, or until golden and tender, turning if needed for even browning.
🌿 Mindful Moment: Notice the shape and weight of each potato round as you arrange it on the tray. Leave a little space between the pieces and observe how something simple can become beautiful when given attention.
🧒 Kid Prompt: “What do the potato slices look like? Coins, moons, wheels, or tiny golden planets?”
💬 Reflective Prompt: “What ordinary things become more interesting when you slow down and really notice them?”
    2. Blend the Hummus:

In a food processor, combine the beets, chickpeas, tahini, lemon juice, garlic, and the remaining 2 tablespoons olive oil.
Blend until smooth and creamy, stopping to scrape down the sides as needed.
🌿 Mindful Moment: Watch the ingredients transform into a vibrant mixture. Notice the colour becoming brighter and more even with each turn of the food processor.
🧒 Kid Prompt: “What does the bright pink colour remind you of? Flowers, sunsets, berries, or something magical?”
💬 Reflective Prompt: “What colours, places, or experiences bring a sense of joy or energy into your day?”
    3. Assemble with Care:

Allow the potato rounds to cool enough to handle.
Spread or spoon a little beet hummus onto each round.
Garnish with dill, feta, seeds, or other desired toppings.
🌿 Mindful Moment: Notice the contrast between the golden potatoes and bright beet hummus. As you add the toppings, let each round be different rather than trying to make them perfectly alike.
🧒 Kid Prompt: “Can you decorate each potato round differently, like a flower, funny face, jewel, or tiny garden?”
💬 Reflective Prompt: “What does it feel like to create something without needing it to look perfect?”
    4. Serve & Share:

Arrange the finished potato rounds on a platter and enjoy while warm.
🌿 Mindful Moment: Before eating, pause to notice the colours, aromas, shapes, and textures on the platter. Choose one round and take the first bite slowly.
🧒 Kid Prompt: “What do you notice first, the warm potato, creamy hummus, colourful topping, or something else?”
💬 Reflective Prompt: “How does sharing something you've made change the experience of enjoying it?”
