Tap the time in each step to start a build-in timer and cook with a little more ease and flow. Be sure to have your volume up to hear the timer chimes!
    1. Preheat & Prepare:

Preheat the oven to 200°C (400°F).
Line a baking sheet with parchment paper or silicone mat and gather the ingredients.
🌿 Mindful Moment: Before beginning, notice your feet on the floor and the ingredients in front of you. Take one comfortable breath and allow yourself to begin without rushing.
🧒 Kid Prompt: “Can you help find all the colours you see in our ingredients?”
💬 Reflective Prompt: “What helps you feel ready when you're beginning something?”
    2. Season the Chicken:

In a bowl, combine the olive oil, garlic, lemon juice, lemon zest, thyme, salt, and pepper.
Rub the mixture evenly over the chicken.
Safety Note: An adult should handle the raw chicken. Wash hands with soap and water afterward and clean any utensils or surfaces that touched the raw poultry.
🌿 Mindful Moment: Notice how the aromas come together, bright lemon, earthy herbs, and fragrant garlic. Observe how each ingredient contributes something different.
🧒 Kid Prompt: “Which smell do you notice first? The lemon, garlic, or thyme?”
💬 Reflective Prompt: “What small things bring brightness or warmth into your day?”
    3. Arrange the Fennel:

Place the fennel wedges on the prepared baking sheet.
Drizzle lightly with olive oil and season with salt and pepper.
Nestle the chicken among the fennel pieces.
🌿 Mindful Moment: Notice the fennel's curved layers and delicate shapes. As you arrange the pieces, allow yourself to enjoy creating without needing everything to look perfect.
🧒 Kid Prompt: “Can you arrange the fennel pieces like flowers, feathers, or a little garden?”
💬 Reflective Prompt: “Where in your life could you make a little more room for play or creativity?”
    4. Roast Gently:

Roast for approximately 30 to 35 minutes, or until the fennel is tender and caramelized and the chicken is fully cooked.
Food-Safety Note: Cooking time varies with the size and type of chicken thighs. Check the thickest part with a food thermometer; chicken should reach at least 74°C (165°F) without the thermometer touching bone.
🌿 Mindful Moment: As dinner roasts, notice the aroma gradually filling the kitchen. Observe how waiting can be an active part of creating rather than simply time that needs to pass.
🧒 Kid Prompt: “What do you imagine is changing inside the oven right now?”
💬 Reflective Prompt: “What helps you stay steady when something needs time?”
    5. Finish with Presence:

Allow the chicken to rest briefly after removing it from the oven.
Garnish with fennel fronds or fresh parsley and serve with grains or greens, if desired.
🌿 Mindful Moment: Notice the finished meal, the golden chicken, softened fennel, fresh green garnish, and citrus aroma. Pause to appreciate the transformation before serving.
🧒 Kid Prompt: “Can you add the green garnish like you're putting the finishing touches on a picture?”
💬 Reflective Prompt: “What is something you created or contributed to today that you can appreciate?”
    6. Eat Slowly:

Sit together and enjoy the meal, noticing the contrast between bright lemon, savory herbs, tender chicken, and the gentle sweetness of roasted fennel.
🌿 Mindful Moment: Before your first bite, notice the aroma, colours, and temperature of the food. Take one bite slowly and see which flavor or texture you notice first.
🧒 Kid Prompt: “What do you notice first? The lemony, juicy, soft, sweet, herby, or something else?”
💬 Reflective Prompt: “What becomes easier to appreciate when you slow down?”
