Tap the time in each step to start a build-in timer and cook with a little more ease and flow. Be sure to have your volume up to hear the timer chimes!
Make the Ribbons:
Use a vegetable peeler to create the long, thin cucumber ribbons. Stop when you reach the watery core and rotate.🌿 Mindful Moment: Notice the coolness of the cucumber in your hand and the smooth motion of the peeler. Watch the ribbons curl and fall like soft green ribbons.👧 Kid Prompt: “Do these look like green streamers or garden ribbons?”💬 Prompt: “What does the texture of the cucumber feel like in your hands?”Optional Marination:
Toss the ribbons with a sprinkle of salt and a few drops of lemon juice. Let sit for 5–10 minutes to soften and add extra flavour.🌿 Mindful Moment: Watch how the cucumber ribbons soften and relax as they rest.👧 Kid Prompt: “Do the ribbons look different after their lemon sprinkle?”💬 Prompt: “What does the lemon smell like to you? Bright, fresh, or zingy?”Mix the Dip:
In a small bowl, combine the yogurt, lemon juice, herbs of choice, olive oil, and garlic if using. Stir until creamy. Season with some salt and pepper to taste.🌿 Mindful Moment: Pause to smell the herbs before mixing. Notice the creamy texture as the dip comes together.👧 Kid Prompt: “Does this dip look like clouds or a garden swirl?”💬 Prompt: “Which scent stands out most? Lemon, herbs, or garlic?”Assemble with Love:
Twist the cucumber ribbons into gentle spirals and arrange around the yogurt bowl. Garnish with extra herbs or edible flowers if desired.🌿 Mindful Moment: Move slowly as you arrange the ribbons. Notice the shapes and colours forming a small edible garden.👧 Kid Prompt: “Can we make little cucumber flowers or spirals?”💬 Prompt: “How does presentation change the way a dish feels?”Serve Chilled:
Serve cooled on a warm day, with a chilled hand and a soft heart.🌿 Mindful Moment: Before the first bite, take a slow breath and notice the refreshing scent and coolness.👧 Kid Prompt: “What sound does a crunchy cucumber make?”💬 Prompt: “How does this fresh bite make your body feel?”
Notes
Storage and Reheating
Fridge: The yogurt dip can be stored in an airtight container for 3 to 4 days. The cucumber ribbons are best made and eaten fresh, but will keep for 1 to 2 days lightly marinated. Freezer: Not recommended for either due to texture changes.Variations
- Zingy Version: Add some lemon zest, sumac, or a touch of Dijon mustard to the dip for some extra zip!
- Creamier: Blend in a mashed avocado or a spoonful of tahini for a more creamy texture.
- Kid-Friendly: Use a mild yogurt, sweeten lightly with a drizzle of honey or maple syrup, and use mini skewers for fun.
- Add Crunch: Top with some toasted seeds or crushed pistachios.
