Ingredients
  

  • 1 large Cucumber or 2 small Cucumbers
  • Pinch of Salt or Lemon Juice, optional for marinating the cucumbers
For the Yogurt Dip
  • ½ cup Plain Greek Yogurt or Dairy Free Alternative
  • 1 tsp Lemon Juice
  • 1 tbsp Fresh Dill, chopped
  • 1 tbsp Fresh Parsley or Mint, chopped
  • 1 tsp Olive Oil
  • ½ small Garlic Clove, finely grated (optional)
  • Salt and Pepper to taste

Method

  1. Make the Ribbons:

    Use a vegetable peeler to create the long, thin cucumber ribbons.
    Stop when you reach the watery core and rotate.

  2. Optional Marination:

    Toss the ribbons with a sprinkle of salt and a few drops of lemon juice.

  3. Mix the Dip:

    In a small bowl, combine the yogurt, lemon juice, herbs of choice, olive oil, and garlic if using.
    Stir until creamy.

Notes

Storage and Reheating

Fridge: The yogurt dip can be stored in an airtight container for 3 to 4 days. The cucumber ribbons are best made and eaten fresh, but will keep for 1 to 2 days lightly marinated.
Freezer: Not recommended for either due to texture changes.

 

Variations 

  • Zingy Version: Add some lemon zest, sumac, or a touch of Dijon mustard to the dip for some extra zip!
  • Creamier: Blend in a mashed avocado or a spoonful of tahini for a more creamy texture.
  • Kid-Friendly: Use a mild yogurt, sweeten lightly with a drizzle of honey or maple syrup, and use mini skewers for fun.
