These Cashew Cream Stuffed Dates are a creamy, naturally sweet, no-bake vegan dessert made with rich Medjool dates and smooth dairy-free cashew cream. Perfect for healthy snacking, holiday platters, or an easy plant-based treat ready in minutes.

Ingredients
  

  • ¾ cup Raw Cashews, soaked for 4 hours or boiled for 10 minutes
  • 1 to 2 tbsps Maple Syrup or Honey
  • 1 tsp Vanilla Extract
  • ¼ tsp Ground Cinnamon
  • Pinch of Salt
  • 2 to 4 tbsps Water, as needed
For Dates
  • 10 to 12 Soft Medjool Dates, pitted
Optional Toppings
  • Pistachios, chopped
  • Cacao Nibs
  • Flaky Salt
  • Rose Petals
  • Orange Zest

Method

  1. Soak the Cashews:

    Soak cashews in warm water for 4 hours or boil for 10 minutes until soft. Drain.

    In a blender, combine the soaked cashews, maple syrup or honey, vanilla extract, cinnamon, salt, and 2 tbsp of the water.

Notes

Storage and Reheating

Room Temp: Best eaten fresh, but can be kept in a sealed container for up to 4 days. 
Freezer: Freeze individually and thaw as needed for up to 1 month.
Reheat: Not needed, but can be slightly warmed for a melty treat.
